Coconut palm (Cocosnucifera) is a woody plant of the palm family, widely dispersed throughout the tropics, in particular along the coast and on theislands of the Pacific and Indian Oceans. Theastonishing fruit of the coconut palm, native to the Malay Archipelago, has been used in human nutrition since ancient times, in the form of flour, milk or coconut oil.
Coconut oil is extracted from the coconut meat applying the cold press method, using innovative screw presses. This cold pressed, unrefined edible vegetable oil is a stable, healthy saturated fat, free from gluten, hydrogenated fats, cholesterol, additives, artificial additives or preservatives. The oil extracted from fresh coconut meat has a high content of medium chain fatty acids, as much as between 70 and 85%, with lauric acid accounting for the largest volume among fatty acids. Medium chain fatty acids, unlike the long chain fatty acids that prevail in other vegetable oils, are not stored in the adipose tissue butthey are rather rapidly absorbed in the body, regulating digestion and bowel movements. This oil ranks among the healthiest and most versatile oils for human consumption. Thanks to its natural coconut taste and flavour, itis quite convenient for food preparation. It is more stable at high temperatures than other vegetable oils. Its high count smoking (around 180°C) makes it is ideal for cooking, frying or baking.
