
It is important to understand that coconut butter is not the same thing as coconut oil. Coconut oil is obtained by extracting oil from coconut flesh, coconut butter on the other hand is made by pureeing the flesh. This means that the nutritional content of the two products is different. Whilst coconut oil is 100% fat, Granum coconut butter, besides a comparatively low fat content (61.09%), contains fibre. The main fatty acid in both products is, of course the same – lauric acid. Interestingly, coconut oil is the richest source of this fatty acid, after breast milk, best known for the important role it plays in developing a baby’s immune system.
Coconut butter can be widely applied in cooking and baking. Unlike coconut oil it is not used for frying or sauteing. However, its delicate flavour, creamy consistency and binding properties make it a popular ingredient in Eastern cuisines as well as vegan, paleo and gluten-free recipes.
Uses: Coconut butter can be spread on bread or toast, plain or with jam or honey. As it is an excellent substitute for eggs and milk, it can be used in any number of vegan treats.
